We use No. 2 grade with a protein content of 13.0 per cent. It's the closest grade to what an average might be. A higher grade, let's say No. 1 at 13.5 per cent, would see a higher percentage of wheat discounted on delivery. Based on our experience, we believe 2-13.0 should create more opportunity for quality premiums than discounts. Other industry experts have also identified this as the base grade to capture most wheat deliveries while keeping standards high enough for a good quality milling wheat.
